OOLONG TEA

Oolong tea is sometimes referred to as brown or blue tea, sitting halfway between black tea and green tea. In many respects, it's the most complex tea to produce, since the leaves are only partially oxidized. Repeated rolling brings the tea to its desired level of oxidation, somewhere between the zero oxidation of green tea and the full oxidation of black tea.
